The olive is picked by hand, selecting only the largest and most ripe ones. They are then de-bitter and flavoured with Pesto. Provencal pesto is a blend of three ingredients: garlic, basil and olive oil. 
This mixture is very pleasant and very fresh. It brings out the authenticity of Provence. A must in our preparations!
