History of Tomme Napoleon

For nearly half a century, the family company of Dominique offers good quality, authentic, handmade and agricultural cheeses.

It is about an experimented and passionate team which produces, with the help of Dominique, that delicious cheese.

Fabrication

Tomme Napoléon is a cheese from the best Pyrenean milk coming from local ewe breeds. To produce its cheese, Dominique heats up the thermised milk between 73°C and 79°C during 20 seconds, and then he immediately cools it down.

After the curdling of the milk and thanks to the addition of rennet and lactic starters, the curd is partially dried during the moulding, and then pressed during 24 hours in order to dry it more. Put in cellar the second day, the cheese is salted and matured from 2 to 18 months.

Maturing cellars situated in the heart of the Pyrenees offer a ewe cheese from old traditions of the region.

Tasting advice

Tomme Napoléon goes perfectly with black cherry marmalade, at the beginning or at the end of the meal.

Wine-pairing

Tomme Napoléon matches very well with a dry Jurançon o r white Anjou.

Appearance: rustic and thick rind.
Texture: smooth rind. 
Sense of smell: ewe milk smell.
Taste: strong and persistent flavor.
