History of Tomme De St Our

Tomme de “Saint Ours” is a raw cow milk cheese produced in Savoie in the village of Saint Ours. It is a tomme de Savoie, the oldest cheese of Savoie, which was made by the peasants for their domestic consumption from the skimmed milk of the butter making. Its crust is grey, soft and homogeneous paste oscillates between white and pale yellow. The Tomme de Savoie is consumed all year long, but its dough is more fragrant in summer. Its 7 weeks ripening gives it a sweet and subtle flavor.

Fabrication

Tomme de st Ours is made from raw cow’s milk collected every day. The curd obtained from renneted milk is peeled off and then stirred and heated. It is then molded, squeezed, drained and salted.

Salting is done in saumur. The incorporation of salt participates in the formation of the rind.

The cheese is stored in the cellar on wooden boards where it is regularly returned and rubbed by hand.

The various degradation that will undergo the curd and the different care provided during this operation will create the texture, appearance and aromas of Tomme de st Ours.

Tasting advice

The Tomme de St Ours is eaten after the meal or it can be cooked for a hot meal or toast
