History of Carre De L'Est Des Freres Marchand

The history of Carré de l'Est is linked to the production of Brie in the East. The impractical format of this cheese forced many producers to mould it into coulommiers or squares, as the format of the Brie meant that the curd was too vulnerable to removal from the mould, maturing and during transport.

Fabrication

Its name comes from its shape and region of manufacture. Our Carré de l'Est is unique. Indeed, often manufactured in an industrial way, Philippe Marchand did everything possible to give it back its letters of nobility.

Together with an artisan from Lorraine, they found the right balance in terms of taste and flavour and made it a raw milk cheese, unique in the east of France. Ripened for 3 to 5 weeks, the Carré de l'Est develops a more or less straw-like smell depending on the degree of ripening. Its paste is supple and its taste full of elegance.

Tasting advice

Carré de l'Est is a good snack or end-of-meal cheese, with dark bread and fig jam.

Wine pairing

The Carré de l'Est goes perfectly with a Pinot Noir from Alsace, but it also goes well with an Arbois, a Bourgueil or a Brouilly.

Appearance: light yellow rind with little red pigmentation.
Texture: supple without being soft.
