Who better than the Ronce to embody the power and gentleness of our land? Just a stone's throw from Ronce-les-Bains, this local fish is rocked by the waves, the spray and the currents of the Atlantic Ocean. It continues to grow there after a period of about 24 months in the nursery. Slowly, to the rhythm of the water, its shell hollows out and becomes rounder, leaving room for a delicate flesh, symbol of the Ronce cradle.
