History of Chabichou De Poitou AOP

The legend brings up the Chabichou of Poitou in the eighth century. It would have been made by the Saracens abandoned by fleeing armies after the defeat inflicted in Poitiers in 732 by Charles Martel (Duke of Austrasia, 690-741).

The word "Chabi", abbreviation of Chabichou, would be a deformation of "Chebli" which means goat in Arabic.

Fabrication

The area of production of the Chabichou of Poitou is very limited. It corresponds to the Haut Poitou, limestone which extends over a part of the departments of Vienne, Deux-Sèvres and Charente.

Martine exclusively makes her cheese from fresh and whole goat milk. The fresh curd is molded in a truncated mold with specific dimensions, including in its bottom the inlay "CdP" (Chabichou of Poitou).

After demolding and salting, Chabichou du Poitou is refined to a minimum of 10 days.

Tasting advice

The Chabichou of Poitou is a cheese of end of meal. It can be consumed at any time. It is delicious diced in a salad or in a salty tart with asparagus and gourmet products. It is equally excellent on bread slices with dried fruit.

A wine from Haut Poitou will naturally accompany the Chabichou from Poitou.
